Tripe with tomato

Today we take you back in time, with an ancient and poor recipe: tripe with tomato!
It is not a quick recipe, tripe needs its time, long and slow. Make it with our CHOPPED TOMATOES REGA, it will make even most of you fall in love.

1 kg tripe
800 g Chopped tomatoes REGA
50 g onion
1 clove Garlic
fresh mint
fresh basil
Extra virgin olive oil
Salt and chilli

In a pan, pour the olive oil, onion, garlic and a little chilli pepper, brown everything over a moderate heat.
Add the tripe cut into strips, brown it for a few moments together with the garlic and onion, then add the chopped tomatoes REGA, the necessary salt, plenty of mint and basil.
Mix everything well, put the lid on and cook over moderate heat for about two hours, until the tripe is tender.
Excellent freshly prepared, even better if heated after a few hours or the next day.
