Cream of pumpkin and tomato

Pasta and beans (pasta e fagioli) is a classic Italian dish, a first course with an unmistakable flavor that’s deeply rooted in rural tradition. There are many versions proposed, but the original is flavored with pork rinds. A simple dish that is always tasty and genuine at the same time. Mixed pasta 300 g
Borlotti beans 300 g
Tomato puree 250 g
Lard 80 g
Onions 3 cloves
Celery 30 g
Carrots 30 g
2 bay leaves
Rosemary to taste
Extra virgin olive oil 10 g
Salt up to taste
Black pepper to taste

Heat the oil in a saucepan, add the peeled garlic and the chopped vegetables; let it fry for about 5 minutes, then add the strips of lard and cook for a couple more minutes. Add the Strianese borlotti beans to the sautéed vegetables and about 500 g of water. Pour the tomato puree into the pot and cook for about 20 minutes. Also put the mixed pasta in the same pot, adding water if necessary, until the pasta is cooked. The final touch: a sprinkling of black pepper and the pasta and beans is ready!
