World Pasta Day: tagliatelle alla bolognese!

World Pasta Day, is celebrated every year on 25 October. All over the world, chef and food blogger delight and celebrate this day, promoting recipes that tell the all-Italian passion for pasta, a symbol of the Mediterranean Diet.
Agriconserve Rega have also decided to celebrate World Pasta Day, with a must of Italian cuisine: tagliatelle alla bolognese. The name of this dish means pasta with meat sauce prepared “Bolognese”, which identifies the origin of this recipe, the city of Bologna.

It is a course that in the Bel Paese is usually prepared for Sunday lunch.

To prepare the ragù:
The original recipe for Bolognese sauce includes a tomato concentrate but we know that with our San Marzano Dop REGA everything becomes more succulent!
Ingredients: 150 g. ground beef, 150 g. ground pork, 1 San Marzano Dop REGA, 30 g. butter, 1 carrot, 1 rib celery, 1 onion, ¼ cup or beef stock or water, 1 cup red wine, salt and pepper.

To start, chop the carrot, onion and celery very finely, melt the butter in a pan and fry everything for about 3 minutes. In the meantime, brown the minced meat for a few minutes and blend with the wine. Let the meat brown well and add San Marzano Dop Rega and sprinkle with the broth or water. The cooking must proceed over low heat for about 40 minutes, stirring occasionally.

When cooked, add salt and pepper to taste and voilà your Bolognese sauce is ready to season the tagliatelle, to be served hot.
