• Base: Tomato jam
Ingredients (for 4 mini savory cheesecakes)
For the base:
• 100 g of crackers or taralli
• 40 g of melted butter
For the cream:
• 200 g of ricotta or spreadable cheese
• 50 g of grated parmesan cheese
• 1 tablespoon of milk
• Pepper
For the topping:
• 3–4 tablespoons of tomato jam (or caramelized cherry tomatoes)
Procedure
1. Crush the crackers and mix them with the melted butter. Press them at the bottom of 4 molds.
2. Mix ricotta, parmesan, milk, and pepper, and spread over the base.
3. Refrigerate for 1 hour.
4. Top with the tomato jam.
