San Marzano DOP

“San Marzano dell’agro sarnese-nocerino” or the variety San Marzano tomatoes that grow only in the territory Sarno/Nocera have since 1996 a DOP or in English Protected Designation of Origin [PDO] certificate, acknowledge and recognized by the European Union.
The mild Mediterranean climate, the extremely fertile volcanic soil of the slopes of Mount Vesuvius, the skill and long-time experience of the Sarno/Nocera farmers have contributed to its success in the world.
The characteristics of San Marzano DOP tomatoes are: bittersweet flavor, long oval shape, bright red skin, poor presence of seeds, fibers and easy to peel. The protected designation of origin PDO exclusively refers to the “peeled” and the “peeled fillet” tomato.
The San Marzano DOP tomatoes must have precise technical characteristics: uniform red color with a/b color ratio > 2.2, long and oval shape between 60-80 mm; absence of foreign tastes and odors, drained weight > 65%, Brix > 4%, pH between 4.2-4.5.
The addition of salt (max 3% of the net weight), basil leaves or tomato juice (but exclusively of San Marzano origin) is allowed. The farmer technique of the San Marzano tomato consists of the vertical breeding of plants with use of supports, respecting the centuries-old tradition, this technique and harvest by hand strongly affect the production costs.
Agriconserve Rega offers technical assistance to and supports San Marzano farmers directly through its cooperatives.
Rega is among the first producers of canned San Marzano tomatoes in which we strongly believe, given its high quality and its enormous beneficial properties.

Tomato farmland: Apulia and Tuscany

North-Apulia especially the Foggia province, is the region in Southern Italia with the highest density dedicated to tomatoes for industry (more than 20.000 Ha). Here, Rega’s tomatoes find the optimal grow conditions: no heavy industries which cause pollution, large extensions of fertile soil, water availability and the necessary amount of sun light, indispensable for the right ripeness.
More than 65% of the Apulian tomatoes are long tomatoes (Pomodoro lungo) which are especially used for transforming in peeled tomatoes (variety Docet). 35% of the tomatoes are round tomatoes (Pomodoro tondo), variety Taylor which are used for chopped tomatoes or other tomato products.
Rega has it own technical staff that assists the tomato farmers. Farmers are organized in a cooperative TIERRE frome the name of one of the members Tullio Rega.
The tomatoes are harvested between Augustus and September. Work is done by harvest machines, avoiding abuse of foreign personnel. Within 24 hours the tomatoes are transported to the production site in Striano and processed, conserving the freshness, the color and the flavor of the tomatoes.

Tuscany in the center of Italy is famous for its culture but also for its large rural area’s . Rega started cultivating tomatoes in Tuscany, Grosseto and surrounding near the West-Tyrrhenian cost covering the risk when the harvest in Apulia suffers from disadvantageous weather conditions, like rain, hail, too much sun etc.). In this way our company is guaranteed both the necessary supply of raw material over the two harvest months August and September and a high quality standard of production in order to satisfy the customers’ needs. The Tuscany coast has also a fine climate for the tomatoes, also here the grow conditions are optimal: no heavy industries, large extensions of fertile soil, water come from the wells and much attention at the environment.
